Ninja System: Pasta Fagiole Soup

Pasta Fagioli in the Crockpot~ just like Olive Garden
2 lbs ground beef
1 onion, chopped
3 carrots, chopped
4 stalks celery, chopped
2 (28 ounce) cans diced tomatoes, undrained
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can white kidney beans, drained
3 (10 ounce) cans beef stock
3 teaspoons oregano
2 teaspoons pepper
5 teaspoons parsley
1 teaspoon Tabasco sauce (optional)
1 (20 ounce) jar spaghetti sauce
8 ounces pasta
Directions:
Brown beef in a skillet.
Drain fat from beef and add to crock pot with everything except pasta.
Cook on low 7-8 hours or high 4-5 hours. Add pasta the last 30 minutes.
Serve with a nice crisp green salad and some garlic bread!

Tip: Pre-Packaging Meals

Of course we've all seen the posts on Facebook on how to stock up meals for a month in your freezer at home but how do you do that if you are a trucker? Or maybe you are married to a trucker and you would like to send him on his way with food so all he has to do is heat it up and eat while he is out on the road for a while.

This is what Tina did:
The meats are precooked. Then you just add in some individual servings of frozen veggies his fav or potatoe fries or steamer potatoes all in the bag. All he has to do is open season n heat. I also write out a lil instruction on front of ziploc if there is a non-perishable item sent with supplies like easy mac or something that doesnt need refridgerated.


If you have the possibility it would be even better to vacuum seal the food so it will last longer. Of course you will need a fridge or cooler. The bags will last longer vacuum sealed in a freezer or fridge but this is a great way to save on meals and make it easy on the road.

You can even do this when you are a solo or team driver. Make a menu for the week for instance but make dishes using many of the same ingredients for instance chicken for meat but you could make pasta one day, with potatoes the next etc. but you could buy a big pack and split it up. The possibilities are endless.

Terriyaki Marinade

Have you been craving Teriyaki Chicken, or a good Teriyaki beef?? But all you have is soy sauce???
Put your meat in a zip lock bag, pour in about 1/8 of a cup of sugar, a dash of garlic, and 1/8 to 1/4 cup soy sauce (do not add salt, soy sauce has enough). Be sure to refrigerate while marinading.
Works great for a marinade, a little thin to use as a sauce for eating, but you can thicken it with corn starch (do not use for eating after using for a marinade).
I have used this for chicken one marinade, then for beef the second marinade. I do not use it for more than two marinades.
Guess what's for lunch for me today!!!

Aroma 3-in-1: Chicken, Rice and Salsa

Dinner tonight... Made all in the aroma 3-1... Cook 2 chicken breasts and steam them for a half hour pull them apart, and then poured a jar of salsa over and mixed it... Made Spanish rice in the bottom put the chicken in the top for another half hour... Mixed together... I ate mine with a tortilla shell and some beans and cheese...

Burton Lunchbox: Cornish hen with Red Potatoes and Carrots

 He added all ingredients inside a slow cooker bag (put something on the bottom of the lunchbox so the bottom doesn't burn). Season with salt, pepper, garlic powder, cellery, onions and bell pepper. Cook for 4 hours and enjoy!

Ninja System: Swedish Meatballs

2 tablespoons olive oil, divided
1 onion, diced
1 pound ground beef
1 pound ground pork
1/2 cup Panko*
2 large egg yolks
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Kosher salt and freshly ground black pepper, to taste
FOR THE GRAVY
1/4 cup unsalted butter
1/3 cup all-purpose flour
4 cups beef broth
3/4 cup sour cream
Kosher salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley leaves
INSTRUCTIONS

Heat 1 tablespoon olive oil in a large skillet over medium heat. Add onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes; set aside.
In a large bowl, combine ground beef, ground pork, Panko, egg yolks, allspice, nutmeg and onion; season with salt and pepper, to taste. Using a wooden spoon or clean hands, stir until well combined. Roll the mixture into 1 1/4-to-1 1/2-inch meatballs, forming about 24 meatballs.
Add remaining 1 tablespoon olive oil to the skillet. Add meatballs, in batches, and cook until all sides are browned, about 4-5 minutes. Transfer to a paper towel-lined plate.
To make the gravy, melt butter in the skillet. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef broth and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in sour cream; season with salt and pepper, to taste. Stir in meatballs and cook, stirring occasionally, until heated through and thickened, about 8-10 minutes.

Burton Lunchbox: Estofao

Dinner tonight is a recipe from my home, Guam. We call it estofao'. Filipinos have a very similar dish called adobo. Chicken in a soy sauce, vinegar, and water broth with minced garlic, black pepper, and onions. Mix 1 part vinegar to 2 parts water and soy sauce, add minced garlic and black pepper. Put in the Burton Digital Stove and cook at 350 degrees for 2-3 hours. After about 2 hours mix in the sliced half (or more) of onion and cook at 350 degrees for at least another hour. Served on a bed of Annie Chungs' steamed microwaveable rice. The rice you see here isn't Annie Chung's though. I get these by the six pack at an Asian Mart near where I live in Tacoma, WA. Annie Chung's are just a very similar brand you can find at WalMart that comes in the same container. I'll post the finished pictures before my student and I eat all of it.

It's pretty self explanatory: Fry up peppers, onions, tomato paste, salt, little water to thin the sauce, add rice and cook until rice is done.

Skillet: Mrs. Akers' Pancake Mix

Mix recipe 
4 cups white flour
4 cups wheat flour

1/2 cup baking powder
1/4 cup sugar
2 tsp salt
2 cups coconut oil
3 cups old fashioned quick oats

George Foreman grill & Burton Lunchbox: Terryiaki Chicken Stir Fry

Skillet: Spaghetti Squash

For the squash I made my own sauce you could use store bought if you have a brand you like .then I cut the squash in half scoop out seeds then put in my electric skillet put squash upside down and put water to cover up about an inch above bottom of squash cook until done then scoop out squash then cut up some vegetables I used red,yellow, green peppers, eggplant, broccoli, shallots I forgot the zucchini saute the veggies in olive oil then add the squash and saute a little longer than add some sauce mix together then stuff the shells top with thick slices of fresh mozzarella top with more sauce and bake for about 1 hour I used my oven but on the road I would use my 3 in 1 cooker

Ninja System: Easy Parmesan Chicken, Oven fried zucchini and side salad.

For the chicken
2 Chicken breasts seasoned with your favourite seasoning. I used my Flavorgod spicy seasoning and garlic lovers seasoning and some smoked paprika and pepper. Salt is optional. Cover with about 1/4 cup of your favorite pasta sauce. 
Put chicken in a 350 degree oven for about 45 minutes. Then cover with a little grated Parmesan Cheese and Shredded Mozzarella. Bake for another 5 minutes or so. .. Just long enough to allow the cheese to melt.

Oh, the fries. ..I cut them in strips. ..and seasoned similarly to the chicken and added a little olive oil. ... mixed some almond flour with some Parmesan Cheese and used that as the breading. Rolled the zucchini in that mixture then laid them out on some parchment paper in a 425 degree oven for about 30 mins.

Burton Lunchbox: Pork and Mixed Rice

This makes 2 meals $5.56 for the pork and 1.95 for the rice about 1.5 lbs loin takes 1.75 hrs then add rice for 30 min then cool for a bit and eat

Slow Cooker: Chile Verde

Chile Verde
1 pound of pork stew meat
2 cans of diced green chiles
1 large can of green enchilada sauce
1 jalapeno pepper and onions
Brown the meat with garlic salt, de seed and dice the jalapeño pepper then put everything in the crock pot on high for a few hours until the meat is completely done

Burton Lunchbox: Lunchbox Goulash

Lunchbox goulash. Browned a half pound of burger and added a can of cheff boyrdee beefaroni to it. Then added a small can of corn. Also put some string cheese on top. Turned out pretty good.

Did a little sweat action on some bacon and onions +peppers, threw in a couple of butterfly loin chops --then a butt load o' veggies and now waiting for the magic to happen at medium slow cook.

Ninja System: Barley and Lentil Soup with veggies

Here it is all done. I used 1 leek,1 bunch of bok Choy, about 3 handfuls of baby kale and spinach mix,1 red bell pepper, 1/4 cup barley,1/4 cup lentils, garlic,black and white pepper, cilantro,red pepper flakes,1 small zucchini,2 small jars mushrooms and onion. Add water and cook. It is really good.

Slow Cooker: Cabbage Rolls

1/2 lb each or ground chuck and mild Italian sausage
1/2 large onion diced up
3/4 C uncooked rice

1 to 1 and 1/2 tsp garlic
1/2 tsp or however much you like each of rosemary and oregano
2 eggs
Salt and pepper to taste.
Mix all of that together for your filling
Then turn your Ninja on high, heat your water, and cook about 14 or so leaves until just tender. Take em out and obviously discard your water. 
Roll meat mixture into your cabbage
In your Ninja dump in 1 each 14.5oz can of diced tomatoes and tomato sauce. Then I kinda "rinsed" the can out with some tomato juice and added that too. Add whatever spices you'd like in your sauce (I just added a bit more salt and pepper and oregano and garlic). Place your cabbage rolls in your sauce mixture and cook on slow cooker setting LOW for 4-6 hours and drool while you're driving! lol

Slow Cooker: Caldo de Pollo

Its chicken browned in crockpot ( juices left in ) meat picked off bone cut up. Add squash. onion . Chopped corn on cobb peices Potato .cilantro ( a ton ). Oregano chicken stock. Green pepper. Red pepper flake. Salt n pepper galic chopped. ( normally i add yucca. zucchini carrots. ) this walmart had none.

Skillet: Bill's Black Bean Soup

I give you Bills Black Bean Soup! You're gonna need to get your hands on the following: 1/2 to 1lb each of boneless skinless chicken, kielbasa sausage, and potatoes, 2 cans of beans with the liquid inside, 1 can of whole kernel corn (drained), a 32oz box of beef stock, some extra virgin olive oil, and just about your whole spice rack.
Pic 1: Dump the beans and corn in your pot and let 'me chill for a bit. Now, fry up those spuds, peel and all and cut any way you want (I do cubes/home fries) in some butter, seasoning salt, and pepper and add them to the pot.
Pic 2: Brown the chicken and kielbasa sausage in a little EVOO, salt, pepper, garlic, and onion and toss them in the pot along with your spice rack. No, really, this is a heavily spiced soup. I don't measure, just go by what feels good to you. I use Old Bay, Garlic, Onion, red pepper, black pepper, paprika, and chili powder. Once the spices are in, empty that box of stock over the whole darn thing and crank up the heat!
Pic 3: Bring it up to a boil and hold it there for 5-10 min, then drop it to a simmer for 30-45 minutes, or until it's reduced by about 1/3 - 1/2. I like it thick, and by reducing the stock base, you're gonna turn those spices up from "that's pretty tasty" to somewhere around "flying round house kick to your taste buds".
Garnish it with a little shredded cheese and sour cream and strap on your rocket boots, Scooter...you're blastin' off to Flavor Town.

Ninja System: Turkey Breast with Veggies

Wanted to take a moment to extoll on the virtues of Bradley Cooper and My Ninja! First there both Hotties,they're both wonderful at dinner or making dinner and who wouldn't want Bradley for breakfast or the ninja making breakfast? 
But seriously I wanted to let anyone who hasn't considered the ninja yet know about that awesome turkey we had yesterday,too freaky easy and sooo good. JennieO makes a 2-3 lb turkey breast that is in it's own oven bag,so I plop that in the ninja at 375 for 2.5 hours and at the 1.5 hour mark added a bag of cut up yellow squash,onions and Brussels sprouts with the frozen bag of gravy that came with the turkey boob! Too easy -tastes great-crazy easy clean up and turkey sandwiches for breakfast!
