BLACK BEAN CORN SALSA DISH:
1 sm. Can corn or one fresh ear corn grilled rubbed with olive oil. (Shucked and cut in kernals)
1 tbsp. Olive oil
1C. Quartered cherry tomatoes or 1 med. Reg. Tomatoe diced
1Ripe avacado diced
1 14.5Oz can black beans drained
1/2. Med. Red onion diced
1/2Tsp. Ground cumin
Juice 1-2 limes
1 Serrano chile pepper deseeded finely diced ( optional)
Pinch of cayenne pepper. ( I used a few drops of tabasco sauce)
3Tbsp. Fresh chopped cilantro
Salt and pepper to taste
1Tsp. Agave ( I used 1tsp. Honey)
1/2 tsp. Minced garlic.
Mix all ingredients together and serve.

How To: Clean Your Dishes On The Truck?
Of course cooking on the truck can be relaxing but definitely rewarding because you get to eat a 'home cooked' meal instead of truck stop or fast food! But how do you clean it up afterwards?
There are many ways and tips we have seen in the group over time so I tried collecting the most popular answers for you and hope it helps you in finding the best or easiest way for you.
1: take the dirty dishes with you when taking a shower and either wash and rinse them while you're in the shower and/or the available sink. There are people who don't think this is hygienic and others who say it will all be cleaned anyway: whichever you decide it's an option and we don't judge ;)
2: If you use a slow cooker/crock pot you can fill it with a quarter to half gallon water, let it cook for an hour until water is hot, add 2-3 lemons cut in half into it, add utensils you want to clean e.g. knives etc. and let it cook for another 15 minutes. Let the water cool enough or add more water to make it cooler so it is safe enough to stick your hands into it without getting a 2nd degree burn and use a sponge to scrub the utensils and inside of the cooker. You can throw the water out the window as it is just water with lemons. The pot will smell fresh again and your dishes are clean.
3: Clorox or Lysol wipes. Just clean whatever needs to be cleaned and if you are concerned about the chemicals, wet paper towels with water and wipe again to get rid of the resisdue that may have been left behind.
4: Get a wash tub (plastic) for on the truck and bottle of detergent, get hot water in an empty gallon jug from the truck stop (bathroom) and use it to do dishes in the truck. Throw dirty water out when done.
These are the most used methods by other truckers but if you have a different better way, let us know on Facebook and I'll be glad to add it!

Skillet: Chicken Enchiladas

Dinner is served! Spicy chicken enchiladas at 62 mph (husband was driving. lol)! We are on night shift, short on time and in desperate need of a shower. Eek! Only took about 40 min total for prep and cook. 8)
Ingredients:
2 chicken breasts, cut into pieces and cooked
Chopped white onion
Shredded Monterey and Colby jack cheese
1 can hot enchilada sauce
4 ten inch guerro tortillas
Pepper to taste

Cook chicken.
Add onion, pepper, 3/4 can sauce, and cheese.
Heat on low to medium.
Stir.
When cheese is melted, add mixture to tortillas and fold.
Place in cooker fold side down.
Add sauce and more cheese.
Cook until heated to liking.
Enjoy!

Can You....
cook raw hamburger meat in the lunchbox oven?

Ok I have been working on an experiment basically for new comers to cooking on the truck. I got to thinking about how you start out so minimal. Or those who are not allowed inverters. So I wanted to see if you can fry hamburger meat in a lunch box oven. To my surprise YES YOU CAN results show it was excellent idea. 12V lunch box can do more than our imaginations. will be working on more experiments down the road. So far 1 1/2 hr. Cook time. Cook till no longer pink. Making tacos tonight.

Ninja System: Pesto Pasta With Shrimp

1 box bow tie pasta, cooked , rinsed,drained and cooled. (Pasta was cooked in Ninja)
1 lb medium cooked shrimp
Grape/cherry tomatoes
Cucumbers, sliced
1 8 oz jar of classic pesto sauce
1/2 cup mayo
salt/pepper to taste
Cook pasta, set aside. Mix together pesto and mayo in separate bowl. Combine everything together and chill and serve.
Very yummy if you like shrimp and pesto flavor

Stove top itself comes in case stored, reachable under bunk. After dinner prep cooking is quick. Always disengage fuel can before put away. Fridge,utensil drawer and pantry to right as in every truck. Not pictured. Open windows while cooking recommended. Cook ....Plate .... put equipment away ... EAT ..
