Aroma 3 In 1: Chicken Brocolli and Rice

Two cups washed white rice
Two and a half cups chicken broth
Left over pulled apart chicken
3-4 cups broccoli
Three tablespoons butter
Put washed white rice and chicken broth in bottom pot.
Line steam tray with aluminum foil. Put chicken and broccoli in tray top with butter.
Push white rice on Aroma 3-1 and when done dump top tray into bottom pan and mix well...

Burton Lunchbox: Cilantro Lime Chicken Breast and Rice

The pictures speak for themselves! Cook for one hour and done!
The foil 'snake' goes underneath the foil pan with a little water to prevent the food inside from burning.

Burton Lunchbox: Brocolli Rice Casserole

My inner midwestern cringes when I call this broccoli rice casserole without the cream of soup but it's close.  

1 c chopped chicken 
1/2 onion 
2 handfuls broccoli (chopped) 
1 handful baby carrots
1 pkg Uncle Bens brown & wild rice
1 handful shredded cheese

Mix all ingredients but cheese & place in lunchbox oven. Top with cheese. Cook about 35 minutes. (more if you like less crunch in your veggies) Enjoy.

Ninja System: Filipino Pork Adobo

This can be prepared many ways also in skillet, lunchbox, Aroma 3 in 1 etc. so is not just for one appliance!

Filipino Pork Adobo

1-2 lbs Pork (cut in chunks - I just used chops and cut them up)

2 medium potatoes, peeled and cubed (make sure to rinse chopped potatoes to wash off extra starch, can also used already cooked potatoes)
1/4 C Soy Sauce
1/2 C Vinegar
Dash of Ground Pepper
1-2 pc of dry Bay Leaves
1 head of Garlic 
(can substitute 3 heaping Tbsp Minced Garlic)
Water (depending)

* Put everything together in a large pot or Skillet (can use electric skillet or any comparable cooking device)
*Add enough water to cover meat.
*Cover till simmering, cook for 5 minutes then cook uncovered on med heat till tender and the sauce is getting thicker/reduced down a bit
* add potato. Bring to a boil and cover till potatoes are cooked or warmed through if already cooked. Add water if necessary/not enough sauce.

Skillet: Carribean Shrimp

Tried a new shrimp recipe tonight and it was GOOD. Its from Campbell's. .Caribbean Shrimp is the recipe name..
1 1b uncooked shrimp
2 tb Olive oil
1 tb lime juice 
1 lg onion, chopped 
1 green bell pepper, chopped. (I used half a pepper)
1 fresh or canned jalapeno, minced (I used half a pepper)
1/4 tsp crushed red pepper
1 16 oz jar Pace garlic and lime Verde (gooood stuff)
1/2 cup UNsweetened coconut milk
1\2 cup chopped cilantro
1 cup cooked rice to serve shrimp over
Toss shrimp with lime juice and Blk pepper (to taste), set aside.
Heat oil in skillet and cook onions and peppers until tender.
Stir in red pepper, salsa, coconut milk.
Heat to boil, reduce to low and cover and cook 10 minutes...Next add shrimp and cilantro. Cook 5 minutes until shrimp is done.

Ninja System: Cuban Chicken and Rice

Recipe by Michelle Bowers Gebers (adapted from one of the recipes on one of the Ninja Facebook groups) :)





2tbsp. Olive oil
3Tbsp butter
1lb chicken breast meat (I bought boneless, skinless because that's what I like)
1 large onion, chopped
1 green bell pepper, chopped
4 cloves garlic
1/2 tsp turmeric
1/2 tsp cumin
1 stalk celery, chopped (I left that put but added a package of fresh nushrooms)
1 c. Long grain rice
16oz. Chicken stock (I just used Swanson broth)
1c. Frozen Peas
Salt and pepper chicken (I used tenderloins so no cutting). Turn Ninja on stove top high and brown chicken. Then remove that and add onion, pepper and in my case mushrooms and cook until onion is tender. 
Add your garlic and spices and continue to cook until fragrant. Your truck will smell wonderful! 
Add celery and rice and stir to coat with oil. Then add chicken stock and being to a boil. 
Next, add your chicken back in and set to oven temp of 375°. Bake for 25 minutes. After the timer shuts off, add your frozen peas and leave sit for about 5 minutes or so, until peas are hot.
Serve. Sooo good!!

 Oh! One more thing! The recipe called for one packet of Sazon Goya, whatever that is. Someone made a comment that it tastes like cilantro, and since I HATE cilantro with a PASSION, I left that little ingredient out

Slow Cooker: Curried Chicken

it's really easy. .. you can do it. Just season your chicken with a little salt, black pepper, thyme, allspice, onion, escallion and curry powder. Let it marinade for awhile... the longer the better. Heat a little oil of choice(I use either coconut or canola). Add chicken and seasonings along with a small potato (cut up). Stir a couple times then cover. It'll produce it's own liquids to simmer in. You can add any other veggies that you like after about 15m..eg, carrots, broccoli, zucchini. Should be done in about 45 min total. ( I know I'm terrible with recipes...lol)

Burton Lunchbox: Pork Chops with Rice and Onions

Making some thick cut pork chops with onions and rice tonight. I cut up half an onion and sprinkle with salt, pepper and a little olive oil and put them in a foil pan in the RP to sweat for about 30 min. Place seasoned chops on top and let cook for about 1-1/2 hours. Add a little water and put about 1/2 cup of instant rice till rice is done (about 20 min.)

From The Trucker Gourmet : Vegetarian night. Cook rice set aside cook romas till saucy. And depending on how that works out maybe add salsa or Cholula hot sauce. Bon Appetit

Skillet: Chicken Skillet Casserole

Tonight chicken skillet casserole
4 chicken breasts
1 head broccoli
1 cup rice
2 cans cream of chicken
2 cans cream of mushroom
Poultry seasoning
Sage
Celery salt
Pepper
Cut chicken into chunks cook
Add chopped brocoli add 1 1/2 cup of water when brocoli is tender add 1 cup of rice cover
When rice is tender add soups
Season to taste

Skillet: Jambalaya

I used Louisiana hot sauce (pkgs left from Popeyes ) and two pkgs of red pepper left from pizza and a lil garlic salt and salt and pepper a cup of water and a lil olive oil and I cooked the chicken breast in that mix and then sliced in a polish sausage and some onion and bell pepper, half a tomato and a handful of frozen okra and half a can of red kidney beans and a pkg of precooked uncle bens brown and wild rice and at the end just covered with Colby and cheddar and it was good!!! All veggies are optional and this all cooked in one skillet no mess . It turned out amazing !!!



Burton Lunchbox: Hawaiian Meat Balls

Hawaiian meatballs served over white rice.
1C. Minute rice
1C. Water
Cooked in our road pro lunch box approx. 45 Min. (Time varies with Different lunch boxes) cook till tender.
Hawaiian meatballs:
A half a pack of prepared meatballs (your choice of flavor I used italian style)
Approx 1/2c. Sweet onions ( or to your likeing optional)
1/2 c. Bell peppers. ( Or to your liking)
1/2C. Brown sugar
1C. Pineapple juice
1/3 C. Soy sauce
Approx 1c. Chunk pineapples. 

Ninja System: Corned Beef With Rice and Veggies

Corned Beef, Jasmine rice and corn. SautƩ onions, bell peppers, tomatoes, escallions...... add corned beef and any other preferred seasonings and sauce e.g. garlic powder, all purpose seasoning, Ketchup etc. Stir until heated through. Quick and easy!

Burton Lunch Box: Pork Stir Fry

I cooked the pork first till it browned in a little olive oil and soy sauce then added vegetables (used oriental vegetable mix) the rice is micowave cup I wrapped in foil to heat it up dished on plate ,bed of rice with stir fry spooned on top

Burton Lunchbox: Chicken, Veggies and Rice

 Ingredients
4 chicken breast tenders
1 cup minute rice ready to serve (jasmine)

1 green pepper
1/2 zucchini
1/4 red onion
Marinate chicken in olive oil,sea salt,pepper,garlic powder and oregano
Cut up veggies and put them in road pro
Add rice with salt,pepper,garlic powder and chilli flakes
Mix then add chicken
Cook 45 mins to 1 hr
Please note all spices are to taste and can be changed for what you may like...

Slow Cooker & Toaster Oven: Sweet Hawaiian Chicken

Tonights dinner : sweet Hawaiian crock pot chicken. Recipe : 2lbs chicken chunks, 1c. Pineapple juice, 2/3 brown sugar, 1/3 c. Soy sauce. Combine together cook on low in crock pot 6-8 hours serve with rice. Variation i did. I added chopped onions and chunk pineapples. For the chicken i used the planco bread chicken chunks from walmart. I baked in my toaster oven for an hour till chicken was done. I like to experiment on food. I served over warm uncle bens ready mix rice pilaf. And were ready to eat.

Slow Cooker: Chili Con Carne

This recipe is for a 4-5 qt. slow cooker so if you want to cook it in a Burton you will have to adjust the amounts down.

Ingredients:

1 1/2 lbs ground beef
1 onion
minced garlic
1 can stew tomatoes
ketchup
2 cans pinto beans
2 cans red beans
2 cans black beans
(pick any beans you like; these are what I always use)
chili powder
salt
pepper
cumin powder
1 cup water or 1 can chicken broth (do NOT add if you are not adding rice in later or it will be too much liquid)
tobasco sauce
red pepper flakes
rice (pre-cooked Uncle Bens for microwave; optional) or other if you like

Put the ground beef in the slow cooker, drain the beans and add those. Chop up the onion and add. Then add garlic to taste (I always add 1 spoon). Add 2 spoons chili powder, 1 spoon cumin powder, half a cup ketchup, salt and pepper and red pepper flakes to taste.
Add everything in the slow cooker except tobasco sauce and rice! Let it cook on high for 5-6 hours. The last 15 minutes if you like, add the rice to the pot to let it warm through but no longer as the liquid will soak into the rice and might get too dry!! Then when done, add tobasco sauce if you like it spicier and maybe add grated cheese too  Enjoy!!

Skillet: Lazy Man Special :)

ROAD KILL GRILL presents tonight's lazy man special, rice, (set and forget rice cooker) bag of little smokies with garlic and pepper added and cooked in skillet, then add bush's baked beans and jalapeƱo diced for some spice, heat and serve over your rice. Enjoy, the RKG will be heading to my bunker next week, I might post meals directly from the bunker.





Then one evening later as he had leftovers, he added some canned veggies and created a new meal out of it :)
