Skillet: Filipino Lumpias

Nappa cabbage brocoli slaw mushroom carrots kale bean sprouts (chili peppers optional) purple onions garlic pepper and filipino lumpia seasoning.... stir fry all veggies together then get spring roll wrappers and take veggies and wrap (roll) them into the wrappers then fry in a small amount of oil until golden brown...... you can also mix in any type of crumbled meat or vegetarian meat in the veggie mixture.

When you omit the meat in the lumpias that is Mericel's recipe :)

Microwave: Potatoes With Cheese

Red potatoes cut up small, Italian seasoning, garlic powder, olive oil, Parmesan cheese, microwave for 8 minutes = happy happy driver lol

Cole Slaw

3Tbsp miracle whip
2Tbsp pet milk the kind in the can

11/2Tbsp sugar
1tsp garlic and onion powder
1tsp mustard
1Tbsp pickle juice.
I left 2 ingredients off the original, but you can adjust to your liking

Black Bean and Corn Salsa Dish

BLACK BEAN CORN SALSA DISH:
1 sm. Can corn or one fresh ear corn grilled rubbed with olive oil. (Shucked and cut in kernals)
1 tbsp. Olive oil

1C. Quartered cherry tomatoes or 1 med. Reg. Tomatoe diced
1Ripe avacado diced
1 14.5Oz can black beans drained
1/2. Med. Red onion diced
1/2Tsp. Ground cumin
Juice 1-2 limes
1 Serrano chile pepper deseeded finely diced ( optional)
Pinch of cayenne pepper. ( I used a few drops of tabasco sauce)
3Tbsp. Fresh chopped cilantro
Salt and pepper to taste
1Tsp. Agave ( I used 1tsp. Honey)
1/2 tsp. Minced garlic.
Mix all ingredients together and serve.

Burton Lunchbox: Sugar Free Pumpkin Bread

Lunchbox sugar free pumpkin bread. I am no great cook so my things are easy
2 cups bisquick
1 can pumpkin
3 eggs
1 tablespoon cinnamon
1/3 cup parkay from squeeze bottle
1/2 cup raisins
10 packets of splenda
Mix all together cook in lunchbox for about 1 hour

Quinoa Salad

- salad pictured is without the quinoa added! -

1 cup quinoa
1 cup edamame
1/2 red bell pepper

1/2 yellow bell pepper
1/2 green bell pepper

1 tomato
1/2 cucumber
Salt and pepper to taste
2 tbsp olive oil
2 tbsp lemon juice

1 tbsp fresh lemon zest (grate the lemon zest off the lemon you used for the juice but watch out not to grate the pith which tastes bitter)


Boil the quinoa according to instructions! 


Chop up all the other ingredients and put them all in one large bowl. Drizzle the olive oil and lemon juice in, add the quinoa after it has cooled off, stir all together and put in the fridge for at least 2 hours to let it chill and to let the flavors mix together. Enjoy!

Skillet: Fried Dandelions

Pick while bloom is opened..
Put in cool salt water for a couple hours
Drain then egg wash 
Toss in flour w desired seasoning
Fry in olive oil or bacon grease

Tastes like fried squash with a side of ranch dressing :)

Steamer: Spinach

Want to eat healthier? Try steaming your veggies instead of boiling them! This driver put spinach inside his steamer for 10 minutes and voila! Done! :) Simple, delicious and healthy!

Burton Lunchbox: Southern Beans and Ham

Southern beans : northern beans , chopped onions, 1 bay leaf , 2tbsp chicken base or you can use ham.( purchased from an amish store back home creamy tasting) 1tbsp. Ground cumin, Garlic salt and chopped ham bits. Add enough water to cover beans as cooking add more if needed to cook beans. Cornbread: 1 box jiffy cornbread mix. (Don't have real eggs) 1/4c. Egg beaters, 1/3c. Milk. Made in road pro lunch box.

Antipasto Salad

Ingredients:
Jar of marinated artichoke hearts
Jar of roasted red bell peppers
Half red onion
Small tub grape tomatoes
Genoa salami
Fresh mozzarella cheese
1/2 cup pitted kalimata olives
1/2 cup green olives
Classic Italian dressing

Julienne the onion, salami and bell peppers. Slice the cheese in chunks/strips. Add all ingredients and add a drizzle of Italian dressing. Put in fridge for 1 or 2 hours before serving.

Cucumber and Tomato Salad

Ingredients:
2 cucumbers
1 onion
3 tomatoes
1 clove garlic
2 tbsp vinegar
2 tbsp olive oil
1 tbsp sugar
salt and pepper to taste

Slice the cucumbers up and make small slices from the tomatoes and slice the onion. Mince the garlic add the rest of the ingredients. Put it all in a bowl and let it sit in the fridge for at least 2 hours before serving. Enjoy!

Burton: Macaroni And Cheese

Burton mac and cheese.
Aluminum loaf pan
Foil
Dry macaroni
Cheese sauce
Meat and/or veggie of choice

Spray pan with cooking spray. Pour in macaroni, cheese sauce, meat and/or veggies. Mix well. Cover with foil. About 1 1/2 hr cook time, or til you can smell it. Yes, no water is added. The moisture in the cheese sauce and the steam created by covering will give enough moisture to cook the macaroni!This was an experiment that turned out well, and not into glop! Lol!
