Ninja System: Turkey Breast Roast

Recipe and pictures by Tracy Greene :)

Did my first turkey breast roast in the ninja. Yummy!!! First out in the bag the covered the turkey with cream of mushroom soup, added half a packet each of dry Italian dressing and onion soup, added 1/2 cup water and dried shiitake mushrooms. My turkey was frozen so I put it on crock pot mode in high. Oh I quartered a sweet onion too. I cooked it about 6 hours. Lordy good. Plenty leftover for sandwiches. The left vet gravy would be excellent for hot turkey sandwich plus it comes with it's own gravy packet. Total do again.

Slow Cooker: Cabbage Rolls

Recipe and pictures by Michelle Bowers Gebers :)

1/2 lb each or ground chuck and mild Italian sausage
1/2 large onion diced up
3/4 C uncooked rice

1 to 1 and 1/2 tsp garlic
1/2 tsp or however much you like each of rosemary and oregano
2 eggs
Salt and pepper to taste.
Mix all of that together for your filling
Then turn your Ninja on high, heat your water, and cook about 14 or so leaves until just tender. Take em out and obviously discard your water.
Roll meat mixture into your cabbage
In your Ninja dump in 1 each 14.5oz can of diced tomatoes and tomato sauce. Then I kinda "rinsed" the can out with some tomato juice and added that too. Add whatever spices you'd like in your sauce (I just added a bit more salt and pepper and oregano and garlic). Place your cabbage rolls in your sauce mixture and cook on slow cooker setting LOW for 4-6 hours and drool while you're driving! lol

Skillet: Bill's Black Bean Soup

Recipe and pictures by Bill Rodney :)

I give you Bills Black Bean Soup! You're gonna need to get your hands on the following: 1/2 to 1lb each of boneless skinless chicken, kielbasa sausage, and potatoes, 2 cans of beans with the liquid inside, 1 can of whole kernel corn (drained), a 32oz box of beef stock, some extra virgin olive oil, and just about your whole spice rack.
Pic 1: Dump the beans and corn in your pot and let 'me chill for a bit. Now, fry up those spuds, peel and all and cut any way you want (I do cubes/home fries) in some butter, seasoning salt, and pepper and add them to the pot.
Pic 2: Brown the chicken and kielbasa sausage in a little EVOO, salt, pepper, garlic, and onion and toss them in the pot along with your spice rack. No, really, this is a heavily spiced soup. I don't measure, just go by what feels good to you. I use Old Bay, Garlic, Onion, red pepper, black pepper, paprika, and chili powder. Once the spices are in, empty that box of stock over the whole darn thing and crank up the heat!
Pic 3: Bring it up to a boil and hold it there for 5-10 min, then drop it to a simmer for 30-45 minutes, or until it's reduced by about 1/3 - 1/2. I like it thick, and by reducing the stock base, you're gonna turn those spices up from "that's pretty tasty" to somewhere around "flying round house kick to your taste buds".
Garnish it with a little shredded cheese and sour cream and strap on your rocket boots, Scooter...you're blastin' off to Flavor Town.

Slow Cooker: Honey Chicken

Recipe by Ashley LaVine and picture by Mike Hutson :)

(we doubled the original recipe, and even then we still wanted more! This is the doubled recipe)

2.5 pound boneless, skinless chicken breasts (thighs would be fine too)
Salt and pepper
1 cup honey
1/2 cup soy sauce
4 tablespoons diced onion
4 tablespoons ketchup
2 tablespoon canola oil
2 cloves garlic, minced
4 teaspoons cornstarch dissolved in 6 Tablespoons water

Season both sides of chicken with lightly with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic. Pour over chicken.Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through.Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce.Replace lid and cook sauce on high for ten more minutes or until slightly thickened.Cut chicken into bite size pieces, then return to pot and toss with sauce before serving.

EDIT: Mike Hutson brought up this recipe again, which was originally posted in our group in August 2012 by Ashley. He recommends serving it over rice as he thinks it might be even better :)

Slow Cooker: Soup Beans

Recipe and pictures by Bill Rodney :)

Couple things for you guys today: as previously mentioned, I'm no longer cooking from the truck, and instead of truck food I'll be posting BBQ methods and tips primarily. As such, I'm re-christening Grape Ape Cantina to Big Bear BBQ (bears are my fav animal and I collect them if you wonder about the background ). Now, one to the food!
Making some soup beans in the crockpot today. Here's my recipe:
1) Sort, wash in a colander, soak a lb of beans overnight in enough water to cover by an inch or two
2) In the am, rinse them if you want to (I never do) then add the following: 1 stick of butter, 1/2 lb of smoked pork neck bones, garlic, onion, cilantro, pepper (all 3 to taste), and some liquid smoke.
3) Low for 6 hours stirring occasionally. Last hour or so pull the neck bones, strip the little bits of meat off and toss it back in the pot, then add 2 tablespoons or Ma Se Ca yellow corn flour and stir WELL with a wisk.
Enjoy!

Slow Cooker: Green Chile With Chicken and White Beans

Recipe and pictures by Jessica Reece :)

Green chile with chicken and white beans. Found frozen green chiles in AZ (I think), and was so excited. Dumped the whole package, some chicken tenderloins, a can of northern beans (drained and rinsed), some minced onion and a chicken bullion cube in the crockpot. Set the crock on high until things defrosted, then switched to low. Now I can't wait for the chile roasters.

Slow Cooker/Ninja: Ranch Pesto Chicken

Recipe and pictures by Wendy Copper :)

(Crockpot/Ninja or lunchbox) Ranch Pesto Chicken with carrots and parmesan noodles. Doesn't look pretty, but tastes good.
Chicken breasts or thighs
1 8oz jar pesto
1 ranch (dry) salad dressing packet
1/2cup chicken broth (or water and a chicken bouillon cube)
Mix ingredients together and pour over chicken.
Slow cook for 6-8 hours on low
Serve over pasta or rice..

Slow Cooker: Whole Chicken

Recipe and picture by Petra :)

Buy a whole chicken (I always get the one without the organs etc, inside it but otherwise make sure to remove those), wash and dry it. Then rub it in with spices of your choice.
Put it on top of chopped up celery (4 stalks), 1 onion chopped up and place the chicken on top of it.

Put it on high for 6 hours and it will fall off the bone.
You can serve it as is with some side dishes or you can pull the chicken off the bones and use it for several different meals for instance use part to make a chicken salad to make sandwiches for lunch.
I also like to make a cold quinoa salad and put some pieces of chicken in  there which makes for an excellent healthy dish.

Slow Cooker: Curried Chicken

Recipe and pictures by Yardie GirlTruckin :)

it's really easy. .. you can do it. Just season your chicken with a little salt, black pepper, thyme, allspice, onion, escallion and curry powder. Let it marinade for awhile... the longer the better. Heat a little oil of choice(I use either coconut or canola). Add chicken and seasonings along with a small potato (cut up). Stir a couple times then cover. It'll produce it's own liquids to simmer in. You can add any other veggies that you like after about 15m..eg, carrots, broccoli, zucchini. Should be done in about 45 min total. ( I know I'm terrible with recipes...lol)
