For the carrots I cut them into thin sticks. About 1/2 in. Piece of ginger chopped up very tiny,some orange zest, sea salt, fresh ground pepper, 1/4 cup butter, 1 tbs sugar put all in pan and just cover with water bring to a boil then simmer until carrots are tender then cook down till liquid has evaporated serve with fresh dill
For chicken I used wings about 10 wing pieces, 4 or 5 Roma tomatoes peeled and chopped up, about 1/2 of a small onion chopped, 1 garlic clove crushed, 1 tsp of tumeric, 2 tsp cinnamon, about 1 tsp ginger chopped up, 1/3 cup unsalted butter, sea salt, ground pepper to taste put in skillet covered cook until chicken is nice and tender. Remove chicken keep warm reduce sauce to just were it starts to caramelized add 2 tlbs honey add chicken back coat chicken serve with toasted almonds and sesame seeds

Skillet: Filipino Lumpias

Nappa cabbage brocoli slaw mushroom carrots kale bean sprouts (chili peppers optional) purple onions garlic pepper and filipino lumpia seasoning.... stir fry all veggies together then get spring roll wrappers and take veggies and wrap (roll) them into the wrappers then fry in a small amount of oil until golden brown...... you can also mix in any type of crumbled meat or vegetarian meat in the veggie mixture.
When you omit the meat in the lumpias that is Mericel's recipe :)

Like before I do not use measurements I cook from feel, soul and taste. This is russet potatoes in water 1 large box thing of chicken stock . Garlic powder, onion powder, salt, pepper, crushed red pepper, Italian herbs, and 1 stick of butter boiled together. In a skillet Brown a diced onion Italian sausage and bacon all together pour it into the.soup. then add whipping cream a small thing to it then at the end.add kale sorry for not being specific.

It's pretty self explanatory: Fry up peppers, onions, tomato paste, salt, little water to thin the sauce, add rice and cook until rice is done.

For the squash I made my own sauce you could use store bought if you have a brand you like .then I cut the squash in half scoop out seeds then put in my electric skillet put squash upside down and put water to cover up about an inch above bottom of squash cook until done then scoop out squash then cut up some vegetables I used red,yellow, green peppers, eggplant, broccoli, shallots I forgot the zucchini saute the veggies in olive oil then add the squash and saute a little longer than add some sauce mix together then stuff the shells top with thick slices of fresh mozzarella top with more sauce and bake for about 1 hour I used my oven but on the road I would use my 3 in 1 cooker

Skillet: Sweet Potato Hash with Chorizo and Egg

About 1 c grated sweet potato
2 mini red peppers
Chopped Kale about 1 c (or spinach)
Chorizo (2 oz)
Eggs (optional)
1 green onion
Fry chorizo, peppers & potatoes. Add kale. Cook until wilted. Fry eggs & place on top of hash. Top with green onion tops. Enjoy.
This is also good with green chiles added a well.

Skillet & Slow Cooker: American Goulash

Made goulash and put it in the crockpot.
1 lb hamburger fried up with onion and green pepper. Used the electric skillet.
Put tomato sauce,can of rotel and spices in crockpot
Cooked the elbow noodles in the electric skillet and added to sauce.
Spices are: garlic,Italian season,oregano, chili powder and pepper.
I also add spices to the hamburger mixture.

Skillet: Balsalmic Marinated Ribeye and Salad

1 bottle basalmic dressing and steak. But them in a ziploc for a few hours and then drain the marinade off and throw it in an electric skillet.
Salad of course is anything you want in it.

Skillet: Carribean Shrimp

Tried a new shrimp recipe tonight and it was GOOD. Its from Campbell's. .Caribbean Shrimp is the recipe name..
1 1b uncooked shrimp
2 tb Olive oil
1 tb lime juice
1 lg onion, chopped
1 green bell pepper, chopped. (I used half a pepper)
1 fresh or canned jalapeno, minced (I used half a pepper)
1/4 tsp crushed red pepper
1 16 oz jar Pace garlic and lime Verde (gooood stuff)
1/2 cup UNsweetened coconut milk
1\2 cup chopped cilantro
1 cup cooked rice to serve shrimp over
Toss shrimp with lime juice and Blk pepper (to taste), set aside.
Heat oil in skillet and cook onions and peppers until tender.
Stir in red pepper, salsa, coconut milk.
Heat to boil, reduce to low and cover and cook 10 minutes...Next add shrimp and cilantro. Cook 5 minutes until shrimp is done.

It turned out as good as any meatloaf I've ever tasted out of the oven. This was cooked in an 8 inch electric skillet
