Microwave: Potatoes With Cheese

Red potatoes cut up small, Italian seasoning, garlic powder, olive oil, Parmesan cheese, microwave for 8 minutes = happy happy driver lol

Like before I do not use measurements I cook from feel, soul and taste. This is russet potatoes in water 1 large box thing of chicken stock . Garlic powder, onion powder, salt, pepper, crushed red pepper, Italian herbs, and 1 stick of butter boiled together. In a skillet Brown a diced onion Italian sausage and bacon all together pour it into the.soup. then add whipping cream a small thing to it then at the end.add kale sorry for not being specific.

Ninja System: Cowboy Casserole

1lb ground beef, browned and drained. (If you don't have a Ninja where you can brown the beef, just use the really low fat meat)
1 onion, diced
1 can red kidney beans, undrained
1 15 oz can diced tomatoes, undrained
1 cup frozen corn (I just used a can of corn, drained)
6 medium potatoes, sliced (I used like 7 of the small red ones)
1 can cream of mushroom soup
Couple garlic cloves, minced
1/2 tsp oregano (I didn't have that, so I used Italian blend seasoning)
Couple of beef bouillon cubes, optional
Salt/pepper to taste
*My additions were half a red bell pepper and a half of a jalapeno, diced*
1 cup finely shredded cheddar cheese (add at end of cooking)
Mix everything together in crockpot (except the cheese) , cook on low for 8 hrs or high for 4hrs. Add cheese on top layer the last hour of cooking. *I just added cheese in my bowl*
**Also mine came out really watery for some reason,so I added cornstarch at end to thicken**Anyways, tasted yummy

Slow Cooker: Bacon Wrapped Pork Tenderloin with Potatoes

Wet bake bacon wrapped pork roast! Thursday I did chicken today I did pork roast. I did a few things different this time. the pork roast was larger so I took the roasting bag and opened it up and laid it on my table and then laid the bacon, starting out with two strips one way then cross two strips the other way and then filled in the gaps with the rest of the bacon until it made a large star. Then I place the pork roast in the middle of thatand pulled the bag up and the bacon just kind of wrapped around the pork roast this way didn't have to use toothpicks to hold the bacon and place. Next I put the potatoes on top of the pork roast and an onion on top of that I also season with garlic salt and pepper. I sealed the bag at the top without adding any liquid. I placed this baking bag with the all the ingredients inside the crockpot which I had about 8 ounces of water. I also took the lid of the crockpot placed it inside a cooking bad and used it on top this way kept it from rattling while going down the road. The roast turned out quite moist and very very tasty very good the surprising thing is it didn't fall apart like most pork roast do as you can see in the pictures, when cooked in a crockpot or slow cooker.

Ninja System: Stuffed Pork Chop with Kale, Spinach and Apple Butter with Creamy Brocolli Mashed Potatoes and Veggie Medley

To make the potatoes:

 I used one large potato(it was more than enough for two)...Cut it up in small pieces and boil in water, seasoned with a little garlic seasoning. (Salt can be added if needed), until tender. When the potatoes are cooked, I took them out then added the chopped broccoli to the same water to cook a little. Meanwhile, mash the potato with some butter, a little milk(I used unsweetened almond milk)and a little black pepper. Then add the broccoli and some Grated cheese. And then you're good to go!


To make the pork chops:

I used thick pork chops and cut them open. Stuffed it with a little kale, spinach and some apple butter. Used some toothpicks to close them up. Browned them a little then put them in the oven for 1hr. I used the Ninja this time but I've done them in the slow cooker. .... On high for about 4hrs.

Was blessed to shop tonights dinner: parmesan breaded pork chops baked in toaster oven, potatoes sliced and baked in road pro topped fixings for a baked potato. Little roses red cafe.

Tonight's dinner is fried tators and polska kielbasa ( that i forgot i had lol ) cooked in some garlic, dried onion, chili powered, and italian bread crumbs oh and salt and pepper to taste.

Skillet: Junk!

Tonight's offering at Chez Peterbilt was a skillet version of a childhood staple called 'Junk'. Normally you would alternate layers of hamburger & mushroom soup with layers of thinly sliced potatoes, top with cheese & bake until cheese is all brown & bubbly. Tonight everything thing just got tossed into the skillet & simmered until the potatoes were done & topped with shredded cheese.

When cooking this in a lunchbox make sure to adjust the cooking time and keep an eye on liquids!
