Slow Cooker: Chicken and Dumplings

Chixn n dumplings..tools crockpot
1 chickenn breast cut up
1 small pkg frozen veg mix
1 can chixn cream soup
1 cup milk

Dumplings
1 tater mashed
Flour for binding
Mix til u get a ball than make Lil dumpling
Low for 6-8 hrs

Dessert: No Bake Strawberry 'Cake'

Strawberry cake..
Gram crackers stacked like lasagna
Gram cracker
Whip crm
Sliced strawberry
Repeat
Let set so gram crackers soften
Garnish with hersy chocolate syrup

Burton Lunchbox/Grill: Stuffed Poblano Pepper

93% ground beef
1 cup rice

1 pkg chi chi ' seasoning
1 can red Verde sauce
Chop tamater
Chopped cilantro
Chopped green onions
Mix beef n rice n seasoning together stuff in pepper pour Verde sauce cover with foil bake at 350 1 hr or grill 1 hr
*I roast my pepper put it in a bag to sweat it n peel the skin off make a t shape incision dwn the pepper remove the membranes n stuff*

Slow Cooker: Healthier Pizza

The meatballs were made with 
1 lb 97% lean ground turkey 
1 egg
1/4 cup Italian bread crumbs
1 tbs garlic powder
1 tbs onion flakes
1 tsp black pepper
(I form my meatballs between two spoons for easier clean up)
Pan fry the turkey pepperoni before putting in crock pot (decreases the grease/heartburn)
Place pasta sauce, canned tomatoes, meatballs, pepperoni, diced jalapeƱos (per your heat tolerance) shake in Tabasco ( per your heat tolerance) in the crock pot. Cook on high for 4 hours
Heat 1 tortilla in a pan (this is your "pizza crust) turning once. Sprinkle cheese on one side. Fold in half and cook to your desired crispness.
Place on plate. Spoon sauce, meatballs and pepperoni on tortilla shell. Top with mozzarella and Parmesan cheese.
Makes up to 6 servings
(I had to shuck and cook my corn cob before it went bad)

Grill/Nuwave Oven/ Skillet: Hot Dog Extreme

All beef tri-fecta dogs..tools used greenie skillet can also use a grill or the nu wave oven..

sandy said in the comments there is cheese in the middle of the hot dogs. You make a flat 'sheet' of ground beef and roll the hot dog inside it making a log. Wrap that in bacon and cook it the way you like. You can put it in the oven, grill, deep fry. Enjoy!

Slow Cooker: Bacon Wrapped Chicken and Potatoes

Okay I tried something new today for supper bacon wrapped chicken, I cooked it different that I have ever tried before. I wrap the chicken with bacon and place it in a cooking bag then placed cooking bag with potatoes, onion and seasoning in the crockpot. The difference is I did not add any water or any other liquid to it instead I put about 8 ounces of water in the crockpot and then put the bag in the water which created a wet bake. Or a dry boil. The results was a very moist very tasty meal.

Slow Cooker: Lasagna

 1lb of ground lean hamburger 1 lb of Italian sausage , 1 bag of pepperoni I used the tiny ones , 1 small container reccotta cheese, 1 container cottage cheese, 1 can mushrooms, 1 can black olives 1 large jar of pasta sauce 2 cups of water and I used the no boil noodles. Cooked the meat in the crock pot on high for 2 hrs then added reccotta cheese and cottage cheese with sauce and water broke up noodles and added to the crock pot. Coverd and cooked on low for 3 hrs and then added more cheese and cooked for a hr. Dished out and enjoyed . There is enuf left for 2 more meals.

Burton Lunchbox: Pork Chops with Rice and Onions

Making some thick cut pork chops with onions and rice tonight. I cut up half an onion and sprinkle with salt, pepper and a little olive oil and put them in a foil pan in the RP to sweat for about 30 min. Place seasoned chops on top and let cook for about 1-1/2 hours. Add a little water and put about 1/2 cup of instant rice till rice is done (about 20 min.)

Slow Cooker: Stuffed Grape Leaves (Dolmas)

Little roses red cafe
Stuffed grape leaves
(Stuffed dolmas)
Crockpot method
1Jar pickled grape leaves I found mine at an INGLES back home.
1Lb. Lean hamburger
1C. Minute rice
1 tsp. Dried thyme
1. Tbsp garlic salt
1/2 Tsp. Black pepper
1/4 C. Pine nuts.
About 2-3 cups water
1/4 Lemon juice or 1/2 lemon
Little olive oil about 2 TBSP.
Mix all ingredients well.
Rinse grape leaves soak in water to remove pickling. Once done take each leaf lay on paper towl one at a time. Fill and roll like cabbage rolls. Add water, olive oil and lemon juice in crockpot. Add rolled dolmas. Cover on low 4-5 hours or till filling is done.
Pasta (egg noodles) cook according to package. Drain add about 2-3 tbsp butter , parmesan for flavoring served topped with stuffed dolmas ( grape leaves) my familys favorite greek dish. As I was growing up my MOM handed this recipe down to me and my brother and sister. Several asked for this recipe and this was hard for me to do. I grew up eating these and been in the family for years. Honey suppers done. God bless. ( May my family forgive me)

Product Suggestion: Cutting Board

Just joined. As I new guest, here are a couple of gifts. My no-spill crumb and juice catcher cutting board and my favourite breakfast. The cutting board is two items from the dollar store. A cutting mat, trimmed to fit snug inside a baking sheet. Wipes clean but holds crumbs and juice. The breakfast is a wrap. One egg, beaten well, chopped shallot/green onion and chopped mushroom added along with a little churizzo/smoked sausage/chopped bacon. Cooked in microwave about 90 seconds and laid into a tortilla with some cheddar cheese. Clearly you can mix and match ingredients according to availability and preference. We will also add fresh spinach as a topping for this or as a substitute for lettuce in anything. We eat a lot of wraps as the driver can one-hand it when the co-driver prepares them. My wife and I drive team. Canadian company drivers across Canada and lower 48. Had a 2012 Cascadia, Now in a 2013 Prostar

Slow Cooker: Gyros

Homemade gyros (yeero)
GYRO MEAT (crock pot)
1 lb ground lamb
1 lb ground hamburger
2 Cloves minced garlic
1 Tsp. Dried oregano
1 Tsp. Dried thyme
1 tsp. Ground black pepper
1 Tsp. Salt
1 Tsp. Paprika 
1 Tsp. Dried rosemary.
Mix all ingredients together well blending seasoning in meat form into a loaf at the bottom of crockpot. Cook 4-5 hours. When finished remove carefully allow to rest 5 minutes then cut in thin slices.
TZATZIKI SAUCE:
1c. Greek plain yogurt (or 1c. Sour cream)
1/2 of a cuccumber deseeded and sliced thin in small pieces.
1Tbsp. Dill weed
2 Small cloves minced garlic.
Using pita bread assemble pocket halves filling with gyro meat thin sliced onions and thin sliced tomatoes. Top with tzatziki sauce and enjoy. This turned as close as you can get from the shaved lamb.

Ninja System: Carribean Liver, Onions and Fried Dumplings

To make the liver:
It's seasoned and cooked with onions, thyme, tomatoes, sweet peppers, pimento (allspice), black pepper, Ketchup, soy sauce, pickapepper sauce (any meat sauce can substitute e.g. A1 sauce. Heat oil then on medium heat then add all ingredients... stir until it starts to take colour. Cover pot for a few minutes and then good to go. Menu at The Mobile Island Cafe went Caribbean style this morning....Liver and onions with fried dumplings (Ninja made) and fresh squeezed orange juice (electric citrus juicer).

To make the fried dumplings:
I'm not very good with quantities but about 2 cups all purpose flour, 1Tbsp Baking powder, about 2 Tbps of butter and about 1/2-3/4 cup milk (I use unsweetened
almond milk). You can add salt to taste but I don't because the butter is salty
enough. Mix up the dry stuff then start adding the milk a little at a time while kneading to form a dough ball. Roll in desired size and let them sit for about 5 minutes. Heat some oil, I use either coconut oil or canola oil...fry them up on a medium heat till golden brown, then eat.

1st post from the Red Hot Mess Hall...got the steamer at Wal-Mart ($19.98). Cooked them 20 min and turned out wonderful!!

Burton Lunchbox: El Paso Spicy Chicken Wrap

Cook the chicken until done in the lunch box. Cut in strips and put on the wrap with buffalo sauce or hot sauce, lettuce, tomato and shredded cheese. You can pretty much add anything you like on there to make a nice meal :)

If you are trying to cut sugar out of your diet or cut down on it this is a good alternative rather than using artificial sweeteners. It does have calories but is much lower on the glycemic index than regular sugar.
Of course we aren't medically trained so check with your doctor and/or dietician first if you have health issues before making changes! :)

Skillet: Chicken Skillet Casserole

Tonight chicken skillet casserole
4 chicken breasts
1 head broccoli
1 cup rice
2 cans cream of chicken
2 cans cream of mushroom
Poultry seasoning
Sage
Celery salt
Pepper
Cut chicken into chunks cook
Add chopped brocoli add 1 1/2 cup of water when brocoli is tender add 1 cup of rice cover
When rice is tender add soups
Season to taste

Slow Cooker: Baked Spaghetti Squash

 Quick sauce:
- large can of crushed tomatoes (I season myself, but see then with basil & oregano already in them)
-1 onion

-1 bell pepper
- garlic (I like 3-5 cloves)
- mushrooms, Italian, sausage, or whatever you like
-1 small - med spaghetti squash
- shredded cheese (I've never met a cheese I didn't like)

The spaghetti squash can be cooked whole (well pierced) or halved & seeded then cooked. Crockpot-2? Hours on high with a little water for steam, 15-18 min in the micro or 30-45 min @350 in oven (I use a bit of water for steam). 

Mix sauce, cheese & squash. I prefer to bake mine for 20-30 min to brown the cheese, but it's not necessary. (When we didn't have an oven, I'd just put it all in the crock & leave it on "warm" until we were ready to eat it. )
