To make the liver:
It's seasoned and cooked with onions, thyme, tomatoes, sweet peppers, pimento (allspice), black pepper, Ketchup, soy sauce, pickapepper sauce (any meat sauce can substitute e.g. A1 sauce. Heat oil then on medium heat then add all ingredients... stir until it starts to take colour. Cover pot for a few minutes and then good to go. Menu at The Mobile Island Cafe went Caribbean style this morning....Liver and onions with fried dumplings (Ninja made) and fresh squeezed orange juice (electric citrus juicer).
To make the fried dumplings:
I'm not very good with quantities but about 2 cups all purpose flour, 1Tbsp Baking powder, about 2 Tbps of butter and about 1/2-3/4 cup milk (I use unsweetened
almond milk). You can add salt to taste but I don't because the butter is saltyenough. Mix up the dry stuff then start adding the milk a little at a time while kneading to form a dough ball. Roll in desired size and let them sit for about 5 minutes. Heat some oil, I use either coconut oil or canola oil...fry them up on a medium heat till golden brown, then eat.
