Ninja System or Slow Cooker: Grandma Bradley's Sloppy Joes

Grandma Bradley's Sloppy Joes
(70+ year old recipe)
1lb ground beef (turkey or chicken works well also).
1 Lg onion diced
3/4 cup ketchup
2 Tbsp Yellow mustard (spicy is nice too)
1 Tbsp white vinegar
1 Tbsp Worcestershire sauce.
1 Tbsp sugar.
Brown beef with onions add remaining ingredients simmer 1 hour. Or all day in crock pot.
I add green pepper sometimes to change the flavor a bit. My husband loves this over rice.

Skillet: Chicken Tajine With Tomatoes and Carrots

For the carrots I cut them into thin sticks. About 1/2 in. Piece of ginger chopped up very tiny,some orange zest, sea salt, fresh ground pepper, 1/4 cup butter, 1 tbs sugar put all in pan and just cover with water bring to a boil then simmer until carrots are tender then cook down till liquid has evaporated serve with fresh dill

For chicken I used wings about 10 wing pieces, 4 or 5 Roma tomatoes peeled and chopped up, about 1/2 of a small onion chopped, 1 garlic clove crushed, 1 tsp of tumeric, 2 tsp cinnamon, about 1 tsp ginger chopped up, 1/3 cup unsalted butter, sea salt, ground pepper to taste put in skillet covered cook until chicken is nice and tender. Remove chicken keep warm reduce sauce to just were it starts to caramelized add 2 tlbs honey add chicken back coat chicken serve with toasted almonds and sesame seeds


Aroma 3 In 1: Chicken Brocolli and Rice

Two cups washed white rice
Two and a half cups chicken broth
Left over pulled apart chicken
3-4 cups broccoli
Three tablespoons butter
Put washed white rice and chicken broth in bottom pot.
Line steam tray with aluminum foil. Put chicken and broccoli in tray top with butter.
Push white rice on Aroma 3-1 and when done dump top tray into bottom pan and mix well...

Spicy Chicken Padi May Soup

This can be cooked in pretty much any appliance so I have added many labels to it.


Super simple chixn broth canned or homemade..
Rice noodles
Chopped cilantro

Chopped green onion
Chopped jalapeño
Snow peas
Bamboo shoots
Bean sprouts
Sesame seed oil to taste
Garlic oil to taste
Chopped chixn
Fish sauce optional
Soy sauce optional
Cook noodles to directions..broth oils n veggies brought to temp in a pot..place rice noodles in a bowl n ladle soup mixture over noodles garnish with cilantro green onions n jalapeño n crushed red pepper..few splashes of fish sauce n soy sauce

George Foreman: Beef Kofte With Couscous, Tzatziki and Tomato Salad

Keftas are little meat patties grilled or broiled the spices that I used is a Moroccan blend,and cumin,cilantro, mint leaves these are dried some olive oil mix all together add 1 egg mix all into meat I let it sit about 1/2 hour to let all the flavors blend I used my George Foreman to cook


The yogurt sauce I used Greek I let it sit in a coffee filter to drain about 2 hrs I cut up a cucumber no seeds a clove of garlic very small, add some dried mint,sea salt ,ground pepper and some lemon juice mix all together and let sit so flavors all blend


The salad dressing is 1 part raspberry balsamic vinager to 3 parts olive oil a clove of garlic grated and a small chili pepper cut up real tiny put all together and let sit until ready to use

The foil 'snake' goes underneath the foil pan with a little water to prevent the food inside from burning.

Burton Lunchbox: Bacon and Egg Biscuits

Dunno why but Frost cafe has been stuck on breakfast specials, bacon egg and cheese biscuits made solely in the lunch box cooker. Bacon first get it done as you like it, then put a little bacon grease on each side of a Pillsbury buttery flaky biscuit, about ten to fifteen minutes each side, then cook your eggs with a little milk beaten well for about five minutes, assemble sandwiches however you like and enjoy

Ninja System: Buffalo Chicken Linguine

Buffalo chicken linguine 
Boneless chicken (i had patties i had to use up lol)
2-3 cups chicken broth
Sliced onions (wasnt in recipe, i added them extra)
Celery salt
Garlic
1 packet of dry ranch dressing
1/2 c buffalo sauce (1/4 cup while cooking...and 1/4 c to mix with shredded chicken after)
8 oz cream cheese
1 cup shredded cheddar
Linguine pasta
Place chicken, 2 cups broth, onions, spices, 1/4 c buffalo sauce, dry ranch dressing pack in crock pot. Place cream cheese on top,..and shredded cheddar on top of that. Cook high 4 hrs, or low 8 hrs.
Remove chicken and shread. Add remaing 1/4 c buffalo sauce to chicken.
Turn crock to high, place pasta in crock,..(add additional broth if needed), place chicken on top of pasta...cook until pasta is done..
This sauce was reeeal good if you like buffalo flavor stuff..

Burton Lunchbox: Healthier Chicken and Pasta

Another easy, healthy & low sodium lunchbox meal. (The only salt used was what was in the stock & what was used when I cooked the chicken.) 

Approx 1 c Chicken stock
Handful pasta
Garlic
Onion
Grape tomatoes
Mini peppers
Asparagus
Chicken
Approx 1 c spinach
pepper to taste

Line lunchbox with crockpot liner & place stock & pasta in the bottom. Then add all veggies (except spinach) & chicken. Cook about 35 minutes. Add spinach. Once wilted, serve. Enjoy.

Burton Lunchbox: Brocolli Rice Casserole

My inner midwestern cringes when I call this broccoli rice casserole without the cream of soup but it's close.  

1 c chopped chicken 
1/2 onion 
2 handfuls broccoli (chopped) 
1 handful baby carrots
1 pkg Uncle Bens brown & wild rice
1 handful shredded cheese

Mix all ingredients but cheese & place in lunchbox oven. Top with cheese. Cook about 35 minutes. (more if you like less crunch in your veggies) Enjoy.

Burton Lunchbox: Omelet

Frost cafe making a breakfast special in the lunchbox cooker. I sauteed the leftover onions green chile's and added mushrooms, added tomatoes, milk, and four eggs, then topped off with cheese. It's kind of an omelet lol.

Sauteed onions mushrooms and chile's for about half an hour, that took the longest cause the lunchbox cooker doesn't like to be opened to stir stuff lol, drained grease then added the tomatoes eggs and milk stirring occasionally for about fifteen minutes, once the eggs are good and done add the cheese wait about a minute or so then enjoy. If you add sausage I would cook that first just to be on the safe side

So while we were doing our reset I pulled out the ninja and cooked up a storm. I made hamburgers and burritos then cooked some brats. Sealed them in the ziplock vacuum bags and put them in the freezer. We have enough now for at least all week. Yummm. Do yourself a favor. If you don't have a BBQ in your truck buy some smoked sea salt. It made a world of difference in the burgers. I also add the Montreal seasoning.

Ninja System: Sausage Soup

Sausage soup
Fry sausage, diced onion and garlic.
Next add 1 large can of peeled whole tomatoes. (I broke them up by hand)
1 can cannellini beans, undrained
1can chicken broth (add more if needed when you add pasta)
Carrot sticks (any cut up carrot works)
Diced zucchini. (I added that halfway through cooking time)
Few chicken broth cubes
At end of cooking i added a bag of fresh spinach
Turn crockpot to high and add a cup or so of your favorite pasta. Cook until done.

George Foreman Grill: Ham and Cheese Sandwiches

And this is why I loved having a George Foreman on the truck! Perfect to make sandwiches with whatever you desire on them and grill em! You could even do Nutella on it with banana and grill it for instance if you have a sweet craving ;)

Skillet: Filipino Lumpias

Nappa cabbage brocoli slaw mushroom carrots kale bean sprouts (chili peppers optional) purple onions garlic pepper and filipino lumpia seasoning.... stir fry all veggies together then get spring roll wrappers and take veggies and wrap (roll) them into the wrappers then fry in a small amount of oil until golden brown...... you can also mix in any type of crumbled meat or vegetarian meat in the veggie mixture.

When you omit the meat in the lumpias that is Mericel's recipe :)
