Ingredients:
1 premade graham cracker pie crust
1 large carton of heavy whipped cream (you will use 2 to 2 1/2 cups of it)
1 large can of cherry pie filling (or any other flavor you'd like)
vanilla extract (3 table spoons)
sugar (3 table spoons)
confectioners powdered sugar (2 cups)
16 oz. Philadelphia cream cheese (or other brand)
You do need a mixer or whisk but for the latter you will also need a lot of strong arm muscles - fair warning! This is NOT recommended when you are on a diet as it is a calorie bomb; don't say I didn't give you fair warning!
You mix the whipped cream, add the sugar, until it is light and fluffy.
Put the 16 oz. of cream cheese, which has to be at room temperature, in a mixing bowl, add the vanilla extract and confectioners sugar and add about a quarter of the whipped cream as well to make it easier to mix it up. Add all the whipped cream and make sure everything gets mixed well together.
Grab the pie crust and start filling it. Make it nice and even and put it in the fridge to let it stiffen up for at least one to two hours. Then you can either pour the cherry pie filling over the top like I did, or cut the pie and serve the filling on the side if you want to keep it less messy and store the leftover pie filling in a storage container.
